Procesos de transformación y concentración de la ganadería bovina en la Provincia de Salta

En el artículo se examinan los procesos de transformación y concentración agraria en la ganadería bovina de la Provincia de Salta durante el período 2012-2024. A partir de información proveniente de censos agropecuarios y registros oficiales (Instituto Nacional de Estadística y Censos de la República Argentina (INDEC), Secretaría de Agricultura, Ganadería y Pesca (SAGyP), Servicio Nacional de Sanidad y Calidad Agroalimentaria (SENASA)). Los nuevos datos reflejan una estabilidad en el stock bovino, sin crecimiento, y una disminución sostenida del número de establecimientos, evidenciando una creciente concentración territorial y productiva. Se aplica el índice de Gini para analizar la distribución y cambios de los tipos de actores ganaderos y sus formas de producción.

Processes of transformation and concentration in cattle ranching in the Province of Salta

This article examines the processes of agrarian transformation and concentration within the cattle industry in the Province of Salta during the 2012–2024 period. Drawing on data from agricultural censuses and official records—including the National Institute of Statistics and Censuses (INDEC), the Secretariat of Agriculture, Livestock, and Fisheries (SAGyP), and the National Service for Agri-Food Health and Quality (SENASA)—the findings reveal a stagnation in cattle stocks and a sustained decline in the number of farms. These trends indicate an increasing territorial and productive concentration. The Gini index is applied to analyze the distribution and shifts among different types of livestock actors and their production methods.
